🍈 The Key Lime Seed Dream

This "upgraded" dessert takes the traditional Graham cracker base and replaces it with the earthy, nutty snap of Jöey’s Nordic Seed Crisps. The salt from the seeds perfectly cuts through the tart lime and rich coconut cream.

The Crunch: 1 cup Jöey’s Nordic Seed Crisps, roughly crumbled

The Zesty Cream: * 1 can (14 oz) Sweetened condensed milk (or coconut condensed milk for a dairy-free version)

½ cup Key lime juice (fresh is best!)

1 tbsp Lime zest

1 cup Heavy cream (or chilled coconut cream), whipped to stiff peaks

The Garnish: Extra lime zest and a few whole Seed Crisps for dipping
Instructions
1. Mix the Zesty Base
In a large bowl, whisk together the sweetened condensed milk, key lime juice, and lime zest. You’ll notice the mixture start to thicken almost instantly—that’s the magic of the citrus reacting with the milk.
2. Make it "Dreamy"
Gently fold your whipped cream into the lime mixture. Use a slow "under-and-over" motion with a spatula so you don't lose the airiness. This creates that silky, mousse-like texture.
3. Prep the Crumble
Take your Jöey’s Nordic Seed Crisps and place them in a bag or a bowl. Crush them into chunky pieces—you want a mix of fine crumbs and larger "shatters" to keep that signature Nordic crunch.
4. Layer the Parfait
In glass jars or dessert coupes, start with a generous layer of the seed crisp crumbles. Follow with a thick layer of the key lime cream. Repeat the layers until you reach the top.
5. Chill and Serve
Let the parfaits chill in the fridge for at least 1 hour to set. Just before serving, top with a final sprinkle of seeds and a fresh zest of lime.
